Saint James Vieux Gold Rum

Saint James is the largest distillery in Martinique and one of the oldest rum names anywhere, founded in 1765, and its rhums carry the Martinique AOC, the only appellation d'origine contrôlée in the rum world, which requires fresh-pressed sugarcane juice rather than molasses, continuous column distillation and strict rules on fermentation, strength and aging. This Vieux is the house's entry into aged agricole: cane juice from Martinique's fields, fermented and run through a column still, then aged for a minimum of three years in oak, the floor the AOC sets for the Vieux designation, and bottled at 42% ABV with no added sugar. Three years in cask in the Caribbean turns the grassy, pungent white agricole into something rounder, and tasters on RumX describe grassy sugarcane still at the core, with woody, roasted notes, vanilla and banana from the barrel and a spicy, slightly bitter finish.
